Tomato And Bread Salad

This delicious recipe is a great way to use up extra tomatoes.
Tomato And Bread Salad
Serving Size : 6
Ingredients
4 cups French bread -- torn into 1" chunks
1/4 Cup olive oil
1/2 Small red onion -- chopped
1 Small Garlic Clove -- minced
3 Large Tomatoes -- diced
2 Tablespoons your favorite vinegar
1/2 Teaspoon salt
1/4 Teaspoon pepper -- freshly ground
1 cucumber -- peeled, sliced
1/4 Cup fresh basil -- thinly sliced
Preparation Method
1. Put bread on baking sheet and bake in 350 degree oven for 5 minutes. Heat olive oil in large skillet. Add onion and garlic and cook over medium-high heat 2 minutes. Remove from heat, then stir in tomatoes, vinegar, salt, and pepper. Place bread in large bowl and toss with tomato mixture, cucumber, and basil
