This recipe was shared again by Gayla Peterson, it is from a community cookbook put together by her friends and neighbors. <\/p>\n<p>If you\u2019re like me and love pumpkin, substitute pumpkin for the sweet potato. It\u2019s not just a recipe for Thanksgiving or Christmas, pumpkin and sweet potatoes make great accompaniments to nearly any cool weather dinner. If you would like a copy, send an email to familyresourceblogger (at) gmail.com<\/p>\n<p>Remember, every Friday a new recipe (or a few) will be posted, so be sure to check in!<\/p>\n<p><strong>Sweet Potato Souffl\u00e9<\/strong><\/p>\n<p>3 cups cooked and mashed sweet potatoes<br \/>\n1 cup sugar<br \/>\n2 eggs<br \/>\n1 tablespoon vanilla<br \/>\n\u00bd cup butter, melted<br \/>\nMix above ingredients and put in casserole dish.<br \/>\n1 cup brown sugar<br \/>\n1\/3 cup flour<br \/>\n1 cup chopped pecans<br \/>\n1\/3 cup melted butter<br \/>\nMix above ingredients and pour over sweet potato mixture and fold until the mixture looks mealy.<br \/>\nBake uncovered at 350o until done.<br \/>\n<em>From the Kitchen of June Moriarty <\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>I adore things made with sweet potatoes and with pumpkin.
