{"id":587,"date":"2008-01-29T22:38:50","date_gmt":"2008-01-30T04:38:50","guid":{"rendered":"http:\/\/www.familyresource.com\/blog\/?p=587"},"modified":"2008-01-29T22:38:50","modified_gmt":"2008-01-30T04:38:50","slug":"who-wants-a-cupcake","status":"publish","type":"post","link":"https:\/\/www.familyresource.com\/blog\/2008\/01\/29\/who-wants-a-cupcake\/","title":{"rendered":"Who wants a cupcake?"},"content":{"rendered":"<p>I love me some cupcakes.\u00a0 I&#8217;m still mystified why on earth people should bake an enormous cake for any occasion other than a wedding and watch as it slowly shellacs itself onto a plate after the first few bites.\u00a0 Honestly, who eats this stuff regularly?<\/p>\n<p>The cupcake, in all its glory, got its start in the late 19th century from by the creation of making a cake using measurements (a cup) versus weighing out each ingredient.\u00a0 This was a huge step in cookery history and we&#8217;re celebrating the heck out of it every time a kid has a birthday.\u00a0 Oh, who am I kidding, I had them at my last one too.\u00a0 Know as &#8220;Fairy Cakes&#8221; in the UK and parts of Australia, these diminutive cakes make a perfect craft for birthday parties as the partygoers can go crazy decorating their own.<\/p>\n<p>Tara Burner from <a href=\"http:\/\/makingcupcakecakes.com\">Making Cupcake Cakes<\/a> told me she loves to make Cupcake Cakes in the shapes of snowmen and rainbows among others due to the small cake&#8217;s adaptability and ease.\u00a0 Quick, simple and a snap to decorate, cupcakes are always a hit with the teeny crowd as well as a fabulous quick bite on the road.<\/p>\n<\/p>\n<p>Toss that cake mix and try this easy recipe for awesome wee cakes!<\/p>\n<p>1 1\/2 c. flour<br \/>\n1 c. sugar<br \/>\n1\/4 c. cocoa, sifted<br \/>\n1\/2 tsp. salt<br \/>\n1 tbsp. baking soda<br \/>\n1 c. water<br \/>\n1\/3 c. oil<br \/>\n1 tsp. vanilla<br \/>\n1 tbsp. vinegar<br \/>\n1 (8 oz.) pkg. cream cheese<br \/>\n1 egg<br \/>\n1\/2 c. sugar<\/p>\n<p><!--[if !supportEmptyParas]--><!--[endif]--> Mix all ingredients well. Pour batter into cupcake pans. Bake at 350 degrees for 30 minutes.<\/p>\n<p>ICING:<br \/>\nMix cream cheese, 1 egg and 1\/2 cup sugar. Mix well.
