Super Easy Oatmeal Muffins

I’m a silly girl. Here I am thinking it was Thursday, all day long! I was planning on posting the recipe for these muffins tomorrow, even while watching Supernatural last night! I love Supernatural and I can promise you, these Oatmeal Muffins are just as yummy as Dean Winchester (Jensen Ackles).

Sorry for posting the recipe so late, but these are easy enough for you to whip up for breakfast in a snap! You can use plain or flavored oatmeal.

    Super Easy Oatmeal Muffins

2 1/4 cups Instant or Quick Cooking Oatmeal
1/3 Cup Chopped nuts(optional)
1/3 Cup Raisins
1 tablespoon Baking Powder
1 1/4 Cups Milk
1/4 Cup Honey (sugar is ok, too)
2 tablespoons Veggie Oil

Preheat your over to 400 degrees (F). Make sure to oil/butter your muffin tins or use muffin cups. Mix all of the ingredients in a large bowl. Spoon the batter into each section, these do not rise very high so it is ok to bring the batter near the top. Bake for 15 to 20 minutes or until golden brown around the edges. If not using the muffin cups, the muffins are done when they begin to pull away from the sides.

I have mixed in dates, bananas, honey roasted peanuts, and lots of different spices. These muffins are truly verstile and make a great on the go breakfast. I’ll be posting a picture of some I make soon!
