Vegan Lunch Box
Although I'm not a vegetarian, I do love vegetables, and am always amazed at what vegetarians and vegans can make with just vegetables. Jennifer Shmoo is a good example of someone who makes vegetarian meals an excellent alternative to meat-centric meals. She runs a blog called the Vegan Lunch Box that offers daily vegan meals that are both nutritious and delicious.
Each post has a unique vegan lunch, accompanied with a picture of the meal. After taking a quick glance at her posts, you'll quickly notice the attention and detail that she gives to each meal. The presentation is always appetizing, and she tries to make the meals fun. For example, in her post entitled "Fluffernutter," she combined peanut butter and marshmallows, spread it on bread to make a sandwich, and cut the sandwiches into cat shapes (making it more fun for her child to eat).
Vegan Lunch Box has several vegetarian lunch ideas that are sure to please everyone — even the meat lovers. Since the website is in a blog format, she provides an RSS feed that anyone can subscribe to. The feed will keep you up-to-date on every creation she makes.
